Batonnage Plus 20 Kd is a new technology based on yeast extracts from a specific yeast strain rich in smooth mannoproteins and active antioxidant proprieties. The molecules extracted through our unique system average 20 Kilo Dalton in size and are extremely rich in Glutathione. The extent to which oxygen uptake results in browning depends on the formation of a colorless reaction between oxidized caftaric acid and the peptide glutathione (Singleton et al., 1984). Glutathione couples with oxidized caftaric acid and regenerates hydroquinones which are uncolored, preventing browning.
Glutathione is present in yeast cells at different levels, depending on the nature of the strain. For the preparation of Batonnage Plus 20 Kd, AEB uses the extract of Fermol Arome Plus, the yeast in our collection that naturally produces the biggest amount of glutathione.
Utilization: Re-hydrate in warm water (35 °C/95°F) or wine, for 1/2 hr before mixing. Then add directly to the tank or barrel. Once homogenized it doesn’t need further stirring. Some particles derived from the yeast cells are not completely soluble so a good racking or filtration are needed before bottling. Wait at least two weeks before sterile filtration.
Dosage: 10-40 g/Hl 1-3 lbs/1000 Gal.
Shelf life and storage: Batonnage Plus 20 Kd can be stored at room temperature and low humidity for two years.
