Endozym Glucacel Plus

Endozym® Glucacel Plus is a highly concentrated enzymatic formulation, with β-glucanase activities that avoid glucan gel formation responsible for higher mash and beer viscosity. Secondary Xylanase and Cellulase activities degrade other non-fermentable polysaccharide chains.

Application of AEB enzymatic formulation differs according to whether it is used consistently as a preventive measure in the mash tun (regular protocol for all brews), or as a curative addition due to a quality issue with raw material.

Endozym® Glucacel Plus is:

• Very efficient for classic and speciality malts

• Superior enzyme for raw grain containing arabinoxylans, cellulose and hemicellulose

• Ideal for any yield or quality adjustment due to high °P of wort, cP, unusual ΔP in mash or press filter (Meura 2001), long filtration run and non-conform haze.

Enzymatic action is noticeable until beer filtration, decreasing turbidity (EBC 90° and EBC 25°) and pressure evolution (ΔP/h).


Liquid bacterial enzymatic production composed of highly concentrated β-glucanase and hemicellulase with xylanase activities. Endozym® Glucacel Plus was not processed with any ingredient or microorganism genetically modified (GMO free). Thermostability of this enzyme allow to be active up to 185-195°F.

Instruction for use

Recommended dosage: 150g to 300g per ton of barley malt or any other malt or raw grain containing high levels of non-starch polysaccharides.

Optimal dosing, depends on seasonality of raw material and should be tracked in the brewery laboratory 

Optimal activities parameters:

Temperature: 120 – 185 °F

pH: 4,7 – 7,0

Endozym® Glucacel Plus is added in mash tun after acidification. As a thermostable enzyme, all the activities can be expressed.

12 months when kept closed in its original drum.

Endozym® Glucacel Plus is very stable when stored in a cold room bellow 65 °F, ideally between 40 and 50 °F.
